Chilled Coconut Black Bean Soup











Chilled Coconut Black Bean Soup
Place freshly cooked (preferred) or rinsed 16 oz canned black black beans into processor or blender, add 8 oz of coconut milk then fill to the top with chicken or vegetable stock, add two cloves of fresh raw garlic, jalapeno to taste, ginger, salt and fresh lime juice. Blend then serve chilled. garnish with fresh cilantro, nectarine salsa (see previous post) , queso fresco (or any fresh white cheese), radish and tortilla chips. drizzle with fresh olive oil

Shaved Ginger Watermelon Ice











Shaved Ginger Watermelon Ice
remove seeds from watermelon and blend 4 parts watermelon with 1 part orange juice and fresh ginger to taste. freeze 4-5 hours until completely frozen. Shave with a fork and serve with a spoonful of sweetened condensed milk, cream or on its own. garnish with fresh mint.

Nectarine Salsa











Nectarine Salsa
Chop fresh tomatoes, garlic, cilantro, jalapeno, red onion and nectarines. toss with sea salt, a little olive oil and serve with chips, tacos etc....

Grilled Fish Tacos











Grilled Fish Tacos with Nectarine Salsa
Season fresh white fish with white pepper, sea salt, and olive oil, grill approx 7 minutes serve with fresh lime, avocado, radish, Purple cabbage slaw and nectarine salsa (see previous posts) in corn tortilla (I don't believe in flour tortillas) but be yourself!

Purple Cabbage Slaw











Purple Cabbage Slaw
Chop purple cabbage and toss with radish, golden raisin, jalapeno and chive. dress with a light olive oil mayonnaise, lime juice and salt. Serve chilled or room temperature

Chilled Pea Salad











Chilled Pea Salad
Blanch peas in salted water, chill then toss with lime juice, cilantro, jalapeno, red onion and feta cheese. Salt and serve chilled

Grilled Halibut with Watermelon Rind and Okra Salad












Grilled Watermelon Rind and Okra Salad
skewer cubes of watermelon rind and whole okra, drizzle with olive oil, sea salt and black pepper. Grill till slightly chard. toss with fresh olive oil and lemon juice. Watermelon rind requires a little more time on the grill generally so skewer separately then remove skewers and toss together before serving.

Grilled Halibut
season with Salt and pepper and grill approx 7 minutes, squeeze fresh lemon and serve with watermelon rind and okra
