Brazil Nut Milk



A delicious dose of selenium! This recipe for Brazil nut milk is made the proper way. It's hard to find a recipe out there for nut milk that states the importance of discarding the soaking water. All nuts, seeds, grains and legumes contain large amounts of toxic phytates. When you soak the aforementioned, the phytic acid is broken down, thus making the nuts much much better for your health. These naturally occurring phytates block the body from absorbing all the beneficial minerals and nutrients the nuts contain. Not to mention, are bothersome to the digestive system. more on this later...
Here's the recipe for the best Brazil nut milk:

2 cups of Raw Brazil Nutspinch of salt
6 cups of clean filtered or spring water
2-3 TBSP of organic Maple syrup
1-2 teaspoons of organic vanilla extract
1 can of organic coconut milk

tools:1 large jara blender or food processor
cheesecloth or coffee filters
mesh colander
bowl

1. Soak the raw Brazil nuts in cold filtered water with a pinch of salt. covering the nuts a couple
inches over with the water. Let sit on the counter for a full 24 hours.
2.The next day, strain off the water and rinse nuts well. place in blender or food processor, add 6 cups of water and blend for 3 minute.


3. Line a mesh colander with cheese cloth or coffee filters. place over a bowl or stockpot. pour the blended mixture into the colander to strain. let sit for 30 minutes or as long as it takes for all the liquid to run through.

4. Add coconut milk, maple syrup, and vanilla to nut milk. stir or blend well and transfer to glass bottles. refrigerate and enjoy!

Chilled Coconut Black Bean Soup











Chilled Coconut Black Bean Soup
Place freshly cooked (preferred) or rinsed 16 oz canned black black beans into processor or blender, add 8 oz of coconut milk then fill to the top with chicken or vegetable stock, add two cloves of fresh raw garlic, jalapeno to taste, ginger, salt and fresh lime juice. Blend then serve chilled. garnish with fresh cilantro, nectarine salsa (see previous post) , queso fresco (or any fresh white cheese), radish and tortilla chips. drizzle with fresh olive oil

Shaved Ginger Watermelon Ice











Shaved Ginger Watermelon Ice
remove seeds from watermelon and blend 4 parts watermelon with 1 part orange juice and fresh ginger to taste. freeze 4-5 hours until completely frozen. Shave with a fork and serve with a spoonful of sweetened condensed milk, cream or on its own. garnish with fresh mint.

Nectarine Salsa











Nectarine Salsa
Chop fresh tomatoes, garlic, cilantro, jalapeno, red onion and nectarines. toss with sea salt, a little olive oil and serve with chips, tacos etc....

Grilled Fish Tacos











Grilled Fish Tacos with Nectarine Salsa
Season fresh white fish with white pepper, sea salt, and olive oil, grill approx 7 minutes serve with fresh lime, avocado, radish, Purple cabbage slaw and nectarine salsa (see previous posts) in corn tortilla (I don't believe in flour tortillas) but be yourself!

Purple Cabbage Slaw
Chop purple cabbage and toss with radish, golden raisin, jalapeno and chive. dress with a light olive oil mayonnaise, lime juice and salt. Serve chilled or room temperature

Blanch peas in salted water, chill then toss with lime juice, cilantro, jalapeno, red onion and feta cheese. Salt and serve chilled
